These are wonderful! These were a staple during the summer when I grew up.
Bake: 425 degrees F.
Time: 8 - 10 mintues or until lightly brown
1/2 c butter
1 egg
1/2 teas baking soda
1 c sugar
1-3/4 c flour
1/4 teas salt
1/3 c sour milk (1/3 c milk with 1/2 teas vinegar)
1/2 c jelly - your favorite flavor
Cream together butter, egg, and sugar until light and fluffy.
In another bowl, mix baking soda, flour, and salt to combine.
Alternate the dry ingredients with the sour milk in the butter/egg/sugar mixture. Stir until just blended. Don't overmix as this will cause a tough cookie.
Drop by teaspoons onto a lightly floured baking sheet. Whoever has the smalled thumb (or little finger on an adult) press the top down lightly on the cookie to leave an impression. Spoon in a dash of jelly into the thumbprint.
Bake, cool, and enjoy. Keep cookies in a loosely sealed container. They don't stick around long but just in case they keep about a week when not in the fridge. They keep about 2 weeks if kept in the fridge.
