Not Your Ordinary Vinegar & Oil Salad Dressing

1/2 cup extra virgin olive oil
1/4 cup white wine vinegar
1 teaspoon Dijon mustard
Salt and freshly ground black pepper

Yeah! My scanner is finally fixed. Scanning my recipes I've found ones I thought I'd lost, ones from family and friends in their own handwriting, ones from my childhood and youth in my handwriting (which was soooooo much nicer then), and some of my favorites.
