This is a quick, filling soup. Shredded or cubed, leftover chicken makes it a breeze to put together and let simmer for about 20 minutes to meld the flavors. Adding a box frozen chopped spinach or about 1 cup fresh chopped roughly, instead of the
zucchini makes a good soup also.
Add a salad and bread sticks to round out the meal. Simple yet delicious!
