1/2 cup of butter
3/4 cup of sugar
1 tsp vanilla
1 square of bakers chocolate melted (morsels and ande's mints work great also)
2 eggs
One 9" baked pie shell.
Using stand mixer, comibine all ingredients except eggs. Mix well. Add 1 egg beat for 5 min.
Add second egg and beat for an additional 5 min. Pour into baked pie shell. Refrigerate till set. Serve.
Chef's notes:
I typically make a double batch for 9" deep pie crust and have a little left over. Used stick and half of butter and substituted 1/4 cup of heavy whipping cream on the pie this morning. Enjoy.
