2 medium granny smith apples
10 to 12 slices fresh bread - whole wheat works very well
one small onion chopped fine
1 -2 teaspoon minced garlic
one shallot chopped fine
2 eggs
Salt and pepper to taste
Water, chicken broth, veggie broth - any liquid to moisten the mixture
herbs of your choice - I used
sage, lemon thyme, orange thyme, garlic chives, parsley, tarragon chopped roughly
Wash and core apples. Grate apples (peel also) with a medium grater. Cut or tear bread into bite sized cubes. Add all ingredients except liquid. Mix by hand. Add liquid as needed to bind together.
