
Ken's WOW Potato Wedges
Serves 4 Bake 450 degrees F time 30-40 minutes until crisp
2 large or 5-6 small potatoes
1/4 Dijon or Honey mustard
1/4 Parmesan cheese - grated
salt and pepper to taste
1/2 teaspoon Balsamic vinegar
3 tablespoons olive oil
Peel, quarter/wedge potatoes, Dry on paper towel. Set aside.
In a medium bowl mix mustard, Parmesan cheese, salt, pepper, and balsamic vinegar until combined. Coat potatoes with mixture. Coat bottom of a 9x9 inch pan with Olive oil. Pour in potatoes distributing evenly in one layer. Bake. Enjoy.
