Today I wanted something to use up some of the summer veggies I had left. I cut up the veggies and made this sauce. I think I will add some tuna tomorrow to what is left of the veggies. The dressing will be good on scrambled eggs, or maybe steak as a marinade, or just on lettuce.
Veggie base - cut up whatever veggies you have that sound good together. I had the following on hand.
Thinly julienne the veggies.
1 zucchini
1/2 sweet onion
2 carrots
2 ribs celery
2 big handfuls of cherry tomatoes
Avocado Spinach Dressing
I n a food processor combine the following ingredients
2 cloves minced
1 lemon - zest and juice
1 avocado - very ripe
1/4 cup cider vinegar
1/2 cup olive oil or good salad oil
1 small chili pepper
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
1 teaspoon parsley
2 large handfuls spinach leaves
1 teaspoon molasses or honey, or sugar...something to sweeten it slightly
Pulse until a smooth paste. Taste and adjust seasonings. Add enough dressing to veggies to cover. Toss. enjoy.
