Note:
The pear made for a sweet sandwich. But a tart apple would be very
good, as well as, cucumber, peppers or just omitting it entirely. Varing the yogurt or replaing with sour cream will also work. Same for the herb, use your imagination and taste.
Serves: 1
Time to prep: About 10 minutes
1 Ciabatta roll
2 Tablespoons Greek style plain yogurt
1 teaspoon oregano - fresh, minced
1 - 2 slices turkey (or ham, or beef, or lamb, you get the idea)
2 oz. shredded cheese (Italian blend, blue cheese, sharp cheddar, swiss any cheese to suite your taste)
6 - 1/8" slices pear (see Note above)
Preheat broiler to high.
Strain yogurt through a sieve if you have regular yogurt for about 10 minutes.
Toast Ciabatta roll.
Spread yogurt on toasted roll.
Mince oregano and sprinkle on top of yogurt
Slice pear - skin on - into 1/8" slices. A mandoline works well for this. Place on top of sandwich.
Add turkey slices evenly.
Top with shredded cheese.
Broil until cheese is bubbly. Mine took about 3 -4 mintues. Keep checking it browns quickly.
Remove from broiler and enjoy.
