Serves: 3 servings Serving size: 2 blintzes
Blintzes:
1 cup 2% or skim milk
3/4 cup flour
1 egg, beaten well
2 teaspoons sugar
Dash salt
My modifications
1/4 teaspoon nutmeg
Filling:
1-1/2 cups nonfat or low-fat cottage cheese, drained
1/4 cup finely peeled and finely chopped fresh peach
1 teaspoon sugar (filling is sweet)
1 tablespoon orange marmalade
1/4 teaspoon vanilla
My modification
1-1/2 cups plain Greek yogurt (or plain yogurt drained)
Substitute 1/4 cup peach lime jam for fresh peach.
Sauce:
1/2 cup vanilla nonfat or low-fat yogurt
1 tablespoon honey
1. Combine filling ingerdients in small mixing bowl Set aside.
2. Combine sauce ingredients and set aside.
3. Combine blintz ingredients in medium mixing bowl. Beat with whisk until batter is smooth. Spray nonstick skillet (important step) with vegetable cooking spray. Heat skillet of medium-high heat.
4. Add 3 tablespoons better to skillet, tilting skillet to coat bottom. Cook for 30 to 60 seconds, or until lightly browned. Flip blintz and cook until lightly browned. Repeat with remaining batter spraying pan before each blintz. Stack blintz between waxed or parchment paper.
5. To assemble: Spoon scant 3 tablesppones filling down center of each blintz. Roll up. Place on serving place. Arrange peach slices on top and spoon on sauce.
Tip: If desired, arrange rolled blintzes in 13x9 pan. Bak in 350 degree oven 10 - 15 mintues or until hot. Arrange peach slice and spoon on sauce.
