10 - 12 plouts pitted
1/3 cup water
1 1/2 cups sweet cherries, pitted
1 Tablespoon grapefuit zest
2 Tablespoon grapefruit juice
1 1/2 Tablespoon low/no sugar pectin
1/2 cup sugar
Wash,
slice, and pit, plouts and sweet cherries. Pulse in a food processor
until fine. Remove any seeds that are still in the mix.
In
a heavy pan, mix the fruit and the remaining ingredients. Bring to a
boil you can not stir down. Then set the timer for 1 minute and do not
stir. Skim off foam. Ladel into hot sterizled jars. Wipe seal clean.
Add lid and ring.
Process in a hot water bath 10 mintues. Carefully remove jars, avoiding tipping and place on a towel to cool. Let set 24 to ensure seal. Enjoy.
