CAKE, PANCAKE, BROWNIE MIXES, & TOXIN

Check the expiration dates on packages like pancakes and cake mixes that have yeast which over time develop spores. Apparently, the mold that forms in old mixes can be toxic! Throw away ALL OUTDATED pancake mix, Bisquick, brownie mixes etc.you have in your home. You can check this website....... http://www.snopes.com/medical/toxins/pancake.asp

Just another reason to make your own pancake mix EVERY time you need it.

Griddle cakes
1 egg
3/4 to 1 cup milk
1 c. flour
2 tsp baking powder
1/4 to 1/2 tsp salt
2 Tbs fat

Beat egg until very light and add milk. Sift dry ingredients together and add to first mixture. Beat until smooth. Fold in melted shortening.

Pour into 3" circles in medium-hot pan or griddle. Flip when bubbles appear and burst.

Buttermilk Pancakes
Substitute 7/8 c. buttermilk (the dry stuff you mix with water works just as well as fresh)
use 1/2 tsp baking soda and 1/2 tps baking powder in place of the backing powder called for in the above recipe. Add 1 tsp sugar. Stir buttermilk into sifted dry ingredients. Add beaten egg and melted fat. Continue as above.

Corn Meal Pancakes
Decrease the white flour to 1/2c. flour and add 1 c corn meal and 1/2 tsp baking soda. Substitute 1 1/2 c sour milk for the sweet milk. Continue as above.

Buckwheat Pancakes
1 egg
2 tsp molasses
1/2 c milk
1 c water
1 c buckwheat flour
1/2 c white flour
3 tsp baking powder

Combine as in the Griddle cake recipe.

Also one final note - even flour can produce mold spores if kept for a long time. When buying specialty flours you won't use as often buy in small amounts and store in a double ziplock bag in the freezer.
