12 green peppers 3 large onions
6 red peppers 6 hot green or red peppers
Brine
2 cups sugar 1 pint white vinegar
1 TBS salt
Remove seeds from peppers, peel onions. Grind peppers and onions. Place in a large, heavy bottomed pot. Cover with boiling water. Let stand 10 minutes. Drain. Cover again with boiling water and place on stove. Bring to a rolling boil. Drain. Return to stove. Add brine ingredients to pot. Bring to a boil for 15 minutes. Remove from heat.
Ladle into clean, sterilized jars leaving ¼ inch headspace. Wipe rims clean. Add lids and rings. Process in a hot water bath 10 minutes.
