1 bag carrots - ready to eat kind
2 -3 garlic minced
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
Drizzle molasses
Drizzle pure maple syrup
Splash rose wine vinegar from the Greenhouse Tavern
This can be served cold or hot. Cook carrots in a pan with 1/2" water until cooked through when a knife insert halfway slides in easily. Time is anywhere from 15 to 30 minutes depending on the size of the carrot pieces.
Drain water. I save it and use it in soups, stews, etc. It has great flavor!
Mince garlic. Add to carrots, Add salt and pepper. Drizzle in molasses and maple syrup. Add splash of rose wine vinegar. Any semi-sweet to sweet vinegar will work. The taste will vary depending on the vinegar used. Adjust sweetness to your taste.
Serve hot or cold.
Variations:
Add crumbled cooked bacon. Saute carrots in 1 tablespoon bacon fat before adding the rest of the ingredients.
Add sliced green pepper saute until soft
Add sliced onions saute until soft
