I don't know what cookbook this came from any longer. I just know it is good!
The recipe is by Julina G. LeVander, North Carolina, #1868
12 sweet green bell peppers
6 sweet red bell peppers
6 hot green or red peppers
3 large onions
2 cups sugar
1 pint white vinegar
1 Tablespoon salt
Grind pepper and onions after they have been cut and deseeded and onions peeled and washed. Cover with boiling water; let stand 10 mintues; drain. Cover again with boiling water; put on stove and let come to a good boil; drain. Put back on stove and add salt, sugar, and vinegar. Bring to a boil; let boil 15 mintues. Can in pint jars.
I hot water bath for 10 minutes for pint jars.
Half recipe makes 4 quarts.
