Low Sugar Peach Raspberry Basil Jam


4 cups peaches
1 cup raspberries
3 Tablespoons fresh basil - minced
6 Tablespoons lemon juice
6 Tablespoon low/no sugar pectin
2 cups sugar


Drop peaches into boiling water for about 3-5 minutes so skin remove easily. Remove from water and drop into ice water.  Skin, seed, and chop peaches into 1/2" pieces. In a heavy bottomed pot add peaches, raspberries, basil, lemon juice, and pectin to fruit.  Follow package directions on pectin when adding sugar.

Skim off foam.  Pour into clean, sterilized jars, wipe rim clean, add lid and ring.

Process in hot water bath 5 minutes.

Yield: 4 pints 1 jelly jar
