9 eggs

12 stalks asparagus cut into 1/2" pieces
1/2 large sweet onion fine dice
1 teaspoon fresh or 1/2 teaspoon dried parsley, chopped fine
1 teaspoon salt - don't skimp the veggies need it
3/4 teaspoon pepper

1/2 cup shredded Jarlesburg cheese (other options include Guyere, Swiss, Medium Cheddar)
Cook Time: 45 - 60 minutes or until knife inserted in the center comes out clean and cheese is browned.
Temperature: 350 degrees F.
Preheat oven to 350 degrees F. Spray 8 X 8 inch baking dish with cooking spray; coating corners well.
In a bowl beat eggs, milk, salt, pepper, and parsley. Set aside. Trim ends of aspargus. Using a vegetable peeler, trim off outer skin of any ends that are tough. Distribute evenly in baking dish. Peel and dice fine 1/2 sweet onion. Distribute over asparagus. Pour in eggs.
Cook in 350 degree F oven until done about 45 to 60 mintues or until knife inserted in the center comes out clean and cheese is browned.
Remove from oven and serve immediately.
