Cherry Jam - Three Experiments


Cooking up some sweet cherry jam today.  Need some ideas. 

The first start is Kumquat Cherry. I had kumquats left over.

12 kumquats sliced thin seeds removed
1/2 cup tart cherry juice

The second is Cherry Vodka.  I'm finding 100 proof vodka is bringing out the best flavors.

1/2 cup 100 proof vodka


Third will be Cherry Lime

But what spices, herbs, flavors will go well?
Here's the list that I think will go well.  Anyone have any other ideas?

Mexican vanilla - darker, strong fruity vanilla, slight hint of smoke
Tahitian vanilla - not sure on this one as the vanilla is very fruity, very sweet, lots of floral overtones
Almond extract - very traditional
Pecan - very Southern not sure where to find Pecan extract but could use toasted Pecan chopped fine
Allspice - might be too heavy
Cinnamon - Classic
Nutmeg - Classic
Ginger - fresh bits very fine
Citrus - Kumquats, lemon, lime, orange
Brown sugar - Molasses overtones might be too heavy
Chocolate -
Crown Royal
Pear
Apple
Tart Cherry
