Fresh pea and lettuce salad

1 cup fresh peas, shelled and rinsed
1 cup fresh leaf lettuce
1/8 cup shredded hard, sharp cheese like swiss
1 lime
1/4 cup (approximate) good olive oil
1/2 teaspoon sugar
Salt and pepper

Shell peas, cook in boiling salted water about 2 -3 mintues until just done (NO mushy peas!)
Drain and immediately place in cold ice water.

Rinse and pat lettuce dry.  Tear into bit size pieces. Place in a bowl and set aside.  Drain peas well. Add to lettuce.

Finely zest on lime into a small bowl. Squeeze the juice into the bowl.  Drizzle in enough olive oil to create a dressing.  Add salt and pepper to taste.  Add sugar to taste.  Drizzle over salad. Toss gently to coat.

Shred sharp cheese over salad. Enjoy.
