1 yellow summer squash about 6" long
1 large can tomatoes (or one quart home canned)
1 small sweet onion sliced 1/4" slices
Veggie oil
Salt and Pepper to taste
1/2 p 1 teaspoon sugar - optional
Wash and slice summer squash into 1/4" pieces. If using a larger squash remove the seeds. Peel and slice sweet onion.
In a deep skillet, coat bottom lightly with oil. On medium heat, saute summer squash and onion until both are softened. Add tomatoes. Bring to a simmer. Add salt and pepper. Taste. If too bitter add the sugar to taste.
Serve hot or cold.
Any summer squash will work - yellow, zucchini, patty pan etc.
