Good vinegarettes are simple.
Good salad are simple.
Any vegetable sliced very thin will add crunch and flavor to bland lettuce. Better yet, dump the lettuce for some mixed greens.
Vinegarettes are enhanced through the addition of flavored vinegars, mayonnaise, cream, mustards, hard cheeses, spices, citrus, and others flavors such as onion, garlic, shallots, or horseradish. When using citrus a little goes a very long way! Less is better.
In a small pint jar with a tight fitting lid, add oil and vinegar. Add salt, pepper, and sugar. Add well minced flavoroids (onion, garlic, etc.), add herbs, etc. Screw the lid on tight and shake, shake, shake. Refrigerate to store. Shake well before using.
2 parts olive oil
1 part vinegar
2-3 liberal pinches Salt
1 liberal punch pepper
pinch sugar
Here are some ideas to choose from, however, you are only limited by your taste buds and imagination!
REMEMBER. ..A LITTLE GOES A LONG, LONG WAY! Start out with pinches and add more to your taste.
Herbs-mint, chervil, celery, cilantro, thyme, dill, rosemary, lavender, bay...
Spices-cinnamon, nutmeg, red pepper flakes, allspice, ginger, saffron, mustard seed, star anise, vanilla, cloves...
Mustards-yellow, whole grain, honey, French, dijon, lavender. ..
Cheeses-any hard cheese that can be grated finely
Vinegars-balsamic, white wine, rice, apple cider, lemon juice to flavor only
Oil-olive oil, canola, grapeseed, flavored oils...
