Red, White and Leek Onion Jam
This is my original recipe. I am posting this before I lose it again!
2 cups leeks, washed well and sliced thin (1/4")
2 cups red onion (1 large) sliced thin (1/4")
6 cups sweet onion (4 large) sliced thin (1/4")
1/4 cup garlic oil
4 cloves garlic , peeled and minced

3 Tablespoons dark brown sugar
1/4 cup pomagranite balsamic vinegar (can use plain also)
1/4 cup red wine vinegar
Wash, peel, and slice onions and leeks into 1/4-inch slices. Using a mandolin speeds up the process. In a heavy pot, mix the leeks, onions, garlic oil and garlic. Cook over medium heat until translucent, about 7 to 10 minutes. Add remaining ingredients. Cook 35 minutes until all liquid has evaporated. Ladle into clean jars. Seal. When cool refrigerate about 3 weeks.
