2 cups cherries - pitted and halved
1/3 cup Crown Royal
3 Tablespoons Crown Royal
1/2 cup sugar
1-1/2 Tablespoons low/no sugar pectin
Wash, pit and half cherries. I used Rainer cherries, pale peachy red - just beautiful! Any sweet cherry will work. Soak cherries in 1/3 cup Crown Royal until most of the amber goodness is absorbed. I left mine in the fridge overnight due to the late hour I started the recipe. I left the cherries in halves rather than chopping them. They looked much prettier.
Add cherries, additional Crown, and pectin in a pot. Additional Crown can be added to the cook upon discretion.
follow directions on pectin package to add sugar.
Skim foam. Pour into sterilized jars, wipe rims, and seal. Hot water bath for 10 minutes.
Yield: 3 jelly jars
I'm thinking ice cream sundae topping, pork chop glaze, maybe even a sweet n sour stir-fry as the sweet ingredient.
